Quick and easy recipe on spicy breakfast eggs with tomatoes and pickled red onions. You can use any type of hot sauce. It goes very well on a nice toasted slice of bread as well. If you don't have pickled red onions then spring onions will work just fine.

Preheat the pan on medium. |

Crack the eggs out on the pan and sprinkle with salt, pepper, and a bit of thyme. |

Cut the tomatoes into small chunks and get the pickled red onions ready. |

Flip the eggs on the other side and fry them until they are done or just how you like it. When done, simply add the tomatoes, pickled red onions and hot sauce. |
